1 pound asparagus, cut on the bias into 1-inch pieces
3 large tomatoes, seeded and diced (or cherry tomatoes, halved)
½ pound fresh string beans, bite sized pieces
1 can chickpeas, rinsed and drained
2 tbls FIORE Cilantro & Garlic Balsamic
2 tbls FIORE Extra Virgin Olive Oil (medium intensity)
Sea salt and pepper to taste
Steam asparagus and beans until just crisp-tender (about 2-3 minutes); Toss with tomato and chickpeas. Add balsamic and olive oil, mix gently - season to taste with salt and pepper. Serve warm.
